Expand Your World of Greens With Red Mustard

Now is the time of year to experiment with greens you may not be familiar with. We suggest you give Red Mustard a try! The leaves are a striking purple-red on one side and bright green on the other. They are spicy raw, bearing a resemblance to wasabi. When cooked, they become milder but are still flavorful. Red Mustard is rich in vitamins A, C and K, and also antioxidants.
It can be steamed, wilted, sautéed, or prepared like any other green. It is ideal for soups, stews, and of course salads. You can pre-order Red Mustard from Rock Dove Farm for pick-up on Saturday, April 18.
The Versatile Vegan points out that recipes that call for just Mustard greens should work fine with Red Mustard greens. If you are looking for something tasty and light, try this recipe for Balsamic-Glazed Chickpeas and Mustard Greens (https://blog.fatfreevegan.com/2009/07/balsamic-glazed-chickpeas-and-mustard.html).

The Market Doctor's Weekly Wellness Tip
Regain Control and Improve Your Immune Response During Uncertain Times
Lifestyle factors like nutrition, stress management, sleep, exercise/movement and social connection have been shown in multiple studies to support a healthy immune system.
Food and nutrition have a major daily impact on health and well-being. Food-derived compounds may positively impact susceptibility to viral infections balancing inflammatory pathways, reducing oxidative stress, increasing antioxidant levels and balancing the gut microbiome.
Acute and chronic stress may both result in dysregulated immune function and increased susceptibility to infection. First, we need to learn when the stress we are experiencing is unhealthy. This is where mindfulness may be helpful. Second, we need to develop and practice stress management techniques shown to help balance appropriate immune system responsiveness.
Good sleep (7-8 hours nightly) provides improved restorative and regulatory abilities and has a profound impact on immune function and inflammatory signals. As little as one night of disturbed sleep has been shown to be associated with disturbances in innate immune function.
Daily moderate levels of physical exercise/movement have a robust effect on immune function by increasing production of infection fighting white blood cells, improving circulation and decreasing levels of stress hormones.
Social relationships have been shown to be a significant determinant of immune health. Social isolation, loneliness, bereavement and conflict have been shown to up regulate inflammatory processes and decrease immune function. On the other hand, positive social connected-ness has been shown to improve inflammation and immune function.(1)

Stay the course. Learn something new everyday. We will get through this together.
Be well.
