Made From the Market

Welcome to our new series "Made From the Market" featuring recipes, photos, tips and techniques from customers, vendors, staff and volunteers highlighting the use of seasonal market products and the producers who grow and make them.
We want to hear from you about what you're cooking and the products you're using to make healthy and wholesome AND decadent and indulgent dishes for your friends and family!

We're kicking off this new column with our very own Market Manager Christine Hawks and Polenta Soup with Kale and Parmesan from Christopher Kimball's Milk Street. She says it was a great success at her family table, describing it as rustic and delicious.

Here's a few notes from Christine about how it came together:
"Humble ingredients make for a cozy, satisfying soup to chase away those winter chills. I would 100% make this recipe again. Instead of the canned cannellini beans (noted as an addition in the headnote of the recipe), I used dried Great Northern beans (soaked for about 8 hours) from Mud Run Farm and added them with 2 quarts of water and aromatics, including 4 big cloves of garlic from Foraged & Sown. I cooked the beans until just tender (about an hour after bringing the beans to a boil and then simmering, covered.)
Once the beans were tender, I added stone ground cornmeal, locally milled from Mud Run Farm . I finished the soup with Siberian kale from Franklinton Farms."
Make it vegan by omitting the cheese or substituting the Parmesan for a vegan parmesan though the texture will be a little less creamy.
Pro Tip: If you're using dried beans in the soup, avoid salting the soup until the end. Salting the beans while they are cooking can make the beans tough rather than tender and creamy.

We did a new thing! White chocolate coated brittle blanks. We created one with imperial red hot candies that will only be here until Valentine’s Day and a cinnamon coated blank that will be here to stay.
