Microgreens Pack a Big Punch!

Some great things come in amazingly small packages. Consider microgreens (or shoots, which are quite similar), young vegetable greens grown from seeds that are approximately 1–3 inches tall when harvested. Microgreens may be tiny, but they are flavor and nutritional superstars!

Many microgreens taste like a more intense version of the vegetable they will eventually grow into. Others are surprisingly sweet or spicy. They also come in a wide range of colors and textures. Microgreens are much more nutrient dense than their mature versions. They have up to 40 times the vitamins and antioxidants!

Seven Acre Farm specializes in organic microgreens and they offer a large assortment. These include interesting kinds like melon, red-veined sorrel, and broccoli. Plus, they have creative microgreen blends like Kale Yeah! and The Blender, which includes fava bean and spicy mustard. Also, Franklinton Farms has microgreens including amaranth, sunflower and carrot

Microgreens are perfect for salads and the Versatile Vegan likes them in this radish-based Microgreens Salad. Microgreens are also ideal for sandwiches, wraps, smoothies, and more! Check our additional microgreen ideas here.

Other Finds

9N Farm has sweet potatoes, carrots, arugula, and a variety of winter squash. Franklinton Farms has several types of radish, sunchokes, and loads of greens including senposai, claytonia, kale, and spinach. Rock Dove also has greens. Greens have been selling out quickly, so don’t be late!

Mayapple Farms has oyster and shiitake mushrooms. Blue Owl has shallots and several kinds of dried mushrooms. Peppermint fans should check out the dried, organic 8+ ounce bags at Foraged and Sown. If you’ve never had green onion cookies, you should try the amazing ones made by Little Dot, who specialize in Hong Kong inspired baked goods.

Gillogly has numerous apple varieties, including the always popular Evercrisp. And they have pears too! Gillogly is located outside in the south parking lot of The Shops at Worthington Place.

With the snow forecast over the next few days, potato soup with Dill Cheese Curds sounds like a great idea! We like to cut them in small chunks and add them to the soup just a few minutes before serving. #potatosoup #homemadesoup #winterday
