Want a Superfood? Avail Yourself of Kale!

 

The rumors are true; kale is, indeed, a superfood! Kale is one of the most nutrient dense foods on earth. It is packed with vitamins, including loads of  A, C and K, plus Folate, a B vitamin that’s key for brain development. It's also high in antioxidants and many minerals.

 

Kale is super in salads, soups and makes for delicious, crispy chips when roasted. And,

here's a tip, to make kale softer just massage it for a few minutes. It really works! There are both red and green varieties available at the Market. You can find kale at Franklinton Farms and Jorgensen Farms.

February 1 begins American Heart Month. Did you know? Heart disease can often be prevented when people make healthy choices and manage their health conditions. Small steps can lead to big results, keeping your heart beating stronger, longer. Show your heart some love, make some new friends and learn some heart-warming facts about heart health, tomorrow, with Walk with a Doc (indoors!) at the Worthington Farmers Market.

Walk with a Doc (Worthington) will meet at 8am, near the Panera, inside The Shops at Worthington Place. Dr. Jenn Hetrick will lead a discussion and answer your questions about heart health and then participants will walk, stroll and roll, inside the mall, at their own pace.

Free and all ages and abilities-friendly! No sign-up needed. And, you'll be just in time for the opening bell of the Market at 9am!

 

At 10am, join Dr. Jen for a new feature at the Market this week - the Healthy Habits booth (#67). Dr. Jen has teamed up with our own elusive Veggie Spy. Harvest some of their collaborative tidbits and ideas, starring this week's pick from the Veggie Spy! We heard there will be tasty samples!

 

Walk With A Doc is a national, grassroots, non-profit organization with the goal of establishing a healthy lifestyle through movement and community.

 

 

 

Indie singer/songwriter, Jesse Powers is back in Columbus and she's making a stop at the Worthington Farmers Market, tomorrow. Enjoy her unique and soulful sound, beginning at 10, at the open mic performance area (near Panera by the South entrance to the mall). Our open mic performers share their talents for free. Support through tips or purchases of their albums are welcome and appreciated.

Make Healthy Greens a Daily Priority!

 

 

To get the most "bang for your buck" from greens, nutritionally speaking, I recommend focusing on the cruciferous vegetables, belonging to the Brassica genus of plants that include bok choy, broccoli, Brussels sprouts, cabbage, cauliflower, collards, kale, mustard greens and turnip greens, to name a few.

 

As an example, kale is a superstar, nutritionally! A 1-cup serving contains almost 1,200% of the daily value for vitamin K, a key nutrient for helping our bodies ability to regulate oxidative stress and inflammation.(1) Chronic inflammation/oxidative stress has been shown to be associated with many of our most common chronic diseases in the U.S., including cardiovascular diseases like heart attacks, hypertension, strokes, many cancers and brain related disease like dementia, traumatic brain injury, aging and daily toxin exposures we all face every day from our food, water and air.

 

Additionally, kale is an excellent source of vitamin A and C. Like most of its fellow cruciferous vegetables, kale has been studied more extensively in relationship to cancer than any other health condition. This research focus makes perfect sense. Kale's nutrient richness stands out in three particular areas: antioxidant nutrients, anti-inflammatory nutrients and anti-cancer nutrients in the form of glucosinolates. The glucosinolates are converted in our bodies into a cancer preventative compound called isothiocyanates with the help of an enzyme called myrosinase.

 

There are many isothiocyanate compounds, and one of the most studied is sulforaphane. Increased consumption of cruciferous vegetables has been shown to be associated with a decrease in all-cause mortality (death). This includes reductions in cancer-specific mortality for prostate, bladder, lung and breast cancers.(2) Isothiocyanates, like sulforaphane, are the likely reason for these associations. Broccoli sprouts are one of the best sources of sulforophane with up to 100x more of the precursor glucosinolate than mature broccoli. Sulforophane decreases DNA damage by reducing oxidative stress and inflammation leading to the beneficial effects in cancers, aging and brain diseases.

 

A broccoli sprout beverage has been shown to increase excretion of benzene by as much as 61% in human studies. We are all exposed to benzene in our air from auto exhaust and cigarette smoke. A similar broccoli beverage has been shown to improve behavior in individuals with autism. To maximize the amount of sulforophane in your cruciferous veggies, gentle steaming for 3-4 minutes or eating raw after chopping and chewing well is essential to release these beneficial nutrients into our bodies.(2)
