Not Familiar With Kale Rapini?

Now's the Time to Check it Out!

As you're planning what veggies to pre-order this week, consider trying kale rapini. Sometimes referred to as kale raab or napini, these are kale plants that have started to flower.  Unlike most greens, when kale starts to flower it becomes juicy and flavorful. They are usually slightly sweet this time of year, and somewhat resemble broccoli in taste. It  can be substituted in recipes that call for a brassica veggie such as broccoli or even asparagus. Kale rapini is high in calcium and has lots of vitamins A, C, and K.  Check out  pre-ordering at Franklinton Farms and become a kale rapini fan!

The Versatile Vegan likes this simple recipe for Garlic Sauteed Kale Rapini (https://farmandlarder.com/garlic-sauteed-kale-rapini/). Last week we discussed ramps, and they are still available this week. The VV suggests this recipe for Creamy Ramp and Barley Soup (https://www.marthastewart.com/1050625/creamy-ramp-and-barley-soup). And keep in mind that ramps have a very short season!

The Market Doctor's Weekly Wellness Tip

Vitamin C, a Remarkable Substance!

Vitamin C can be a simple and inexpensive way to support your immune system.

Recent studies have shown IV vitamin C to effectively decrease death rates in patients with acute respiratory distress syndrome from 46% to 30% (1,2) and to shorten the duration of mechanical ventilation, especially among critically ill patients, an average 25% using 1000-6000 mg IV vitamin C daily.(4)  High dosage oral vitamin C showed a reduction in common cold symptoms by 17% when using 6000 milligrams daily, and 21% with 8000 mg daily.(3)

Inflammation is a biological phenomenon triggered by the immune system in response to a physical injury or infection.  Vitamin C’s immune-boosting and antioxidant properties can mediate the body’s inflammatory response as shown in a recent study looking at C-reactive protein levels (CRP) which decrease by about 16% in response to 1000 mg daily of oral vitamin C.(5)

Catechins are bioactive compounds present in green tea. Some catechins, such as epigallocatechin gallate (EGCG), are potent scavengers of reactive oxygen species with demonstrated antioxidant, anti-inflammatory, and anticarcinogenic properties. The addition of vitamin C in green tea is shown to increase the bioavailability of these catechins.(6)

The human body responds to mental stress by releasing hormones called corticosteroids, triggering the body’s fight or flight response. Chronic activation of these hormones can impair immune function, increasing susceptibility to infection and disease. Findings in a recent study suggest that high dose vitamin C (several grams daily) might improve immune function, especially during times of mental and physical stress. The study in mice, showed that given high dose vitamin C, they exhibited higher levels of IgG, the most abundant antibody in circulation, responsible for binding a broad selection of pathogens such as viruses, bacteria, and fungi, to prevent infection. (7)

Talk with your doctor today about taking 1000 mg to 3000 mg of vitamin C daily to better support your immune system.

Stay the course. Learn something new everyday. We will get through this together.

Be well.
